Château Septy is one of the oldest names in the Monbazillac appellation (300 years old). It is a vineyard of 22 hectares, planted on clay-limestone slopes with 50% North exposure and 50% South favorable to the development of Botrytis cinerea (noble rot) and grape drying (natural concentration of grapes under the influence of sun and wind) which gives the wine a character of ripe and dried fruits. Fermentation and aging are done in vats (and not in barrels). Known to match beautifully with foie gras, it is also the perfect companion for blue cheese such as Roquefort.
